In the note, the Association makes the comments:
"Distilled alcohol is gluten free even if made with a gluten-containing grain. This is because the gluten protein cannot vaporize and does not pass through the distillation process. Distillation occurs in a large vat and during this process, the solid mass and alcohol separate. The alcohol goes on to evaporate and creates distilled liquor while the solid mass remains behind in the vat. The solid mass contains the gluten protein which does not evaporate; thus, the final distilled products have no gluten."
We do make a Corn vodka that is solely made with corn, however such may have come in contact with other grains in the farming, storage, transportation processes - we do not have control of such thus are unable to specifically comment.
In our facility, we have made a best efforts basis to ensure no further contact with other grains, but again given our total production facility cannot make a clear or unambiguous claim. We do rely on the fact that by definition gluten cannot be vaporized and transferred in the production of beverage grade alcohol.
All our gins are made with Neutral Grain Spirit that we do have a Certificate of Analysis – however I do not see a test listed for gluten on such so not really helpful.
We use dried fruit as a garnish for many of cocktails as are able to capture the peak ripeness of the fruit, reducing our waste. The fruit is edible as served and pairs with our recipes that contain any juice required.
